The short answer

Madhya Pradesh has two very different saffron cultures in one state — Bhopal's Nawabi kitchen, which uses zafran in biryani, korma and sheer khurma with real technique, and the Malwa and Nimar temple belt around Ujjain, where kesar goes into abhishek, prasad and festival sweets. Indore's Sarafa night market and Bhopal's Chowk and Ibrahimpura trade price it at ₹450–850 a gram, supplied through Delhi and Mumbai, against ₹330–360 direct from a Pampore grower family. Ujjain's Mahakaleshwar economy adds a steady ritual demand and the usual shrine-market caveat about safflower sold as saffron.

Sarafa, Chowk, and the Mahakal pilgrim trade

Indore's Sarafa is a jewellery market by day and one of India's great street-food markets by night, and the dry-fruit and provision shops around it are the commercial centre of Malwa. Indore's traders buy through Mumbai; Bhopal, Gwalior and Jabalpur buy through Delhi or Mumbai depending on the route. Two hops either way, then local retail.

Bhopal's old city — Chowk, Ibrahimpura, Jumerati — has the state's most knowledgeable saffron trade, for the same reason Lucknow's Chowk does: the Bhopali Nawabi kitchen actually depends on the spice, so the shops there deal with cooks who can tell the difference. That is a genuine advantage if you buy in person, and it still will not get you a batch code.

Ujjain is the pilgrim market. Mahakaleshwar is one of the twelve Jyotirlingas and draws very large numbers year-round, rising enormously at Simhastha. The shops around the temple sell kesar in small packets for abhishek and tilak, and a substantial share of that is safflower rather than Crocus sativus — the same pattern as Haridwar, Varanasi, Puri and Tirupati.

Bhopali zafran, Malwa kesar

Bhopal's Nawabi kitchen is the state's serious saffron cuisine. Bhopali biryani and gosht korma take saffron steeped in warm milk and added at the dum stage, never fried in the hot ghee. Sheer khurma at Eid, the wedding sweet run, and the whole zafrani register of Bhopali cooking follow the Awadhi and Deccani conventions.

In Malwa and the Hindu household tradition, saffron goes into malpua, mawa bati, the Indore sweet trade's premium lines, and the kheer made at festivals. Ujjain, Omkareshwar and Maheshwar bring the temple use — kesar in abhishek water, in panchamrit, in tilak and in the richer prasad.

Gwalior and the Bundelkhand side lean north and use saffron the way UP does — in kheer, in wedding mithai, and in the winter kesar doodh habit that runs across the whole Hindi belt. Jabalpur and Mahakoshal buy in smaller quantities.

What is the price of kesar in Indore or Bhopal?
Sarafa's provision trade in Indore and the Chowk and Ibrahimpura shops in Bhopal price Kashmiri-labelled Grade 1 at roughly ₹450–850 a gram, supplied through Mumbai or Delhi with two hops before local retail. Direct from a Pampore grower family, ISO 3632 Grade I Mongra is ₹330–360 a gram, sealed and batch-coded with the harvest year, delivered in about 5–8 business days after dispatch.
Is the kesar sold near Mahakaleshwar in Ujjain real?
A meaningful share of it is safflower rather than Crocus sativus. The pilgrim market around Mahakaleshwar sells small packets to visitors buying puja items quickly, and safflower — cheap, orange, superficially similar — is widely sold under the saffron name at every major shrine in India. Safflower has its own legitimate ritual use; the fraud is only the price. Test it: three threads in warm water, and real saffron gives slow deepening gold over ten minutes with the thread staying whole and dark red.
How much zafran goes into Bhopali biryani?
About 20 threads, roughly 0.2 grams, for 1 kg of raw rice. Crush them, steep in three tablespoons of warm milk for fifteen minutes until the milk is deep gold, and drizzle that over the top layer of rice with the fried onion just before you seal the pot for dum. Never fry the threads in the hot ghee with the whole spices at the start — they scorch in seconds, turn bitter, and the aroma leaves with the steam.
How much saffron for abhishek and tilak at a temple?
A trace. Two or three threads ground with a little water or sandal paste makes a tilak; a pinch dissolved in warm water covers an abhishek. One sealed gram of genuine saffron, kept dry and dark, will cover a household's ritual use for a year or more with plenty left for the kitchen. That is the argument for buying one good gram rather than five cheap packets — the quantity needed is tiny, so the only thing that matters is what it actually is.

How do I store saffron in Madhya Pradesh's climate?
Airtight glass, dark cupboard, away from the stove, never the fridge. MP's summers are very hot and its monsoon is humid, and both degrade saffron in different ways — heat and light break down the crocin and safranal, moisture makes the threads clump and lose aroma. A properly closed jar in a dark cupboard handles both. Take out what you need quickly and shut it, and good saffron will hold two to three years.
