An island supply line, honestly described

Everything not caught, grown or made on the islands arrives through Kochi or Beypore. Saffron is not stocked meaningfully in the small island stores, and where it is, it has usually been sitting a long time in a difficult climate. There is no local price and no local origin authority to speak of.

Courier service to Lakshadweep is real but slow and weather-dependent — it routes through Kerala and then onto the ship or the Agatti flight, and monsoon conditions can extend anything. Entry permits and the islands' restricted-access rules do not affect a courier parcel to a resident address, but they do mean the logistics chain is thinner than anywhere on the mainland.

Lakshadweep's cooking is Malayali and Maldivian in equal measure — coconut, tuna, rice — and it is not traditionally a saffron cuisine. Where saffron does appear is in the celebration food of a Muslim island community: biryani and ghee rice at weddings and at Eid, and the milk-based sweets served alongside.

The Malabar biryani tradition carries over from Kozhikode and Beypore, with saffron steeped in warm milk poured over the rice before dum, and the ghee rice served at nikah feasts sometimes takes it. Payasam appears at celebrations in the Kerala manner.

Everyday island cooking uses no saffron at all, which means household quantities here are genuinely small — a gram can be a year's supply and then some.

How should I store saffron on the islands?
This is the hardest saffron climate in India, so it deserves care. Take out what you need immediately and close it. Buy 1 gram rather than 5: a jar you finish within a year keeps far better than one opened repeatedly across two monsoons.
How much does saffron cost, and is it cheaper to order from Kochi?
Genuine ISO 3632 Grade I Kashmiri Mongra is ₹330–360 a gram direct from a Pampore grower family, which is the same price whether the parcel goes to Delhi or to Kavaratti — shipping is calculated separately at checkout from your PIN code. Buying through a Kochi retailer adds a mainland retail margin of ₹200–500 a gram on top and does not shorten the sea leg, so it costs more and arrives at the same time.
Can I pay cash on delivery in Lakshadweep?
No — we are prepaid-only everywhere in India, and on a ten-to-fifteen-day island route it is not a policy we could bend even if we wanted to. A refused COD parcel on that lane is effectively a total loss. Prepaid also means the jar is sealed in Pampore and opened by you, with nothing in between across the whole journey.
How much saffron does an island household actually need?
Very little. Saffron is not part of everyday Lakshadweep cooking — it appears at weddings, at Eid and in celebration biryani and payasam. At 20 threads for a kilo of biryani rice and 10–15 for a payasam, one gram covers a great many occasions. Given the transit times and the humidity, a single 1-gram jar ordered well ahead of the wedding or festival season is the sensible pattern rather than stocking up.
How much saffron goes into ghee rice or wedding biryani?
About 20 threads, roughly 0.2 grams, for 1 kg of raw rice. Crush them, steep in three tablespoons of warm milk for fifteen minutes, and pour that over the top layer just before you seal the pot for dum. Malabar-style rice dishes use saffron lightly and lean on ghee, fried onion and whole spices for depth — doubling the saffron does not make it richer, it makes it taste medicinal.
